Anzac Biscuits

Classic chewy Anzac biscuits with oats and golden syrup.

Ingredients

  • 85 gporridge oats, rolled oats
  • 85 gdesiccated coconut
  • 100 gall-purpose flour
  • 100 gcaster sugar
  • 100 gbutter
  • 1 tbspgolden syrup
  • 1 tspbaking soda, dissolved in 2 tbsp boiling water

Method

    Heat oven to 180°C/fan 160°C/gas 4. Put the oats, coconut, flour and sugar in a bowl.

    Melt the butter in a small pan and stir in the golden syrup. Add the bicarbonate of soda to 2 tbsp boiling water, then stir into the butter and golden syrup mixture.

    Make a well in the middle of the dry ingredients and pour in the butter mixture. Stir gently to combine.

    Drop dessertspoonfuls of the mixture onto buttered baking sheets, spaced about 2.5cm apart to allow for spreading. Bake in batches for 8–10 minutes until golden.
