Apple & Blackberry Crumble

Classic apple and blackberry crumble with vanilla ice cream.

Ingredients

  • 120 gall-purpose flour, for crumble topping
  • 60 gcaster sugar, for crumble topping
  • 60 gbutter, cold; for crumble topping
  • 300 gbraeburn apples, peeled, cored and diced into 2cm pieces; for compote
  • 30 gbutter, for compote
  • 30 gdemerara sugar, for compote
  • 120 gblackberries, for compote
  • 1/4 tspground cinnamon, for compote
  • vanilla ice cream, to serve

Method

    Heat oven to 190°C/170°C fan/gas 5. Tip the flour and sugar into a large bowl. Add the cold butter and rub in with your fingertips until it resembles light breadcrumbs. Do not overwork.

    Spread the crumble mixture evenly over a baking sheet and bake for 15 minutes until lightly golden.

    For the compote, put the butter and demerara sugar in a medium saucepan and melt over medium heat. Cook for 3 minutes until it turns to a light caramel.

    Stir in the apples and cook for 3 minutes. Add the blackberries and cinnamon and cook for 3 minutes more. Cover, remove from the heat and leave for 2–3 minutes.

    Spoon the warm fruit into an ovenproof gratin dish, top with the crumble mixture and reheat in the oven for 5–10 minutes. Serve with vanilla ice cream.
