100 gmascarpone

2 tbsporange blossom water
1meringue nests, crumbled
3apricots, fresh; halved or sliced
2 pieceturkish delight, chopped
25 galmonds, toasted
4 leafmint, for garnish

Method

Place the mascarpone, yogurt, powdered sugar and orange blossom water in a large bowl and whisk until thickened.

Fold in the crumbled meringue, apricots, Turkish delight and almonds. Divide between 2 dessert glasses or bowls.

Decorate with extra mint leaves and serve.
