Argentinian wood-fired mixed grill

Ingredients

  • 2 kgmixed beef cuts
  • 4chorizo sausages
  • 2morcilla
  • salt

Method

    Start a wood fire in your grill and let it burn down to glowing coals. Spread the coals so you have direct and indirect heat zones.

    Season the beef cuts generously with salt just before grilling.

    Place the thicker beef cuts (like ribs) farthest from the direct heat. Cook low and slow, turning occasionally. Ribs may take up to 2 hours; thinner cuts will cook much faster.

    Add the chorizo and morcilla to the grill after the beef has been cooking for about 30 minutes. Grill until cooked through and nicely charred.

    Let the meat rest for 10 minutes before slicing. Serve with chimichurri sauce and grilled vegetables.
