BBQ Pork Sloppy Joes

Smoky BBQ pork buns with pickled onion and roasted sweet potato.

Ingredients

  • 2sweet potatoes, cut into ½-inch wedges
  • 1red onion, a quarter thinly sliced for the quick pickle, the rest finely chopped for the sauce
  • 2 clovegarlic, finely chopped
  • 1lime, juice only, for the quick pickle
  • 2burger buns
  • 1 lbground pork
  • barbecue sauce, about ¼ cup
  • hot sauce, to serve, to taste
  • tomato ketchup
  • sugar, ¼ tsp for the pickled onion and ½ tsp for the sauce
  • butter, melted, for brushing the buns
  • vegetable oil, a drizzle for the wedges and a drizzle for the pan
  • salt, to taste
  • black pepper, to taste

Method

    Preheat oven to 230C (450F). Toss the sweet potato wedges on a baking sheet with a drizzle of oil, salt and pepper. Roast for 20–25 minutes until browned and tender.

    Thinly slice a quarter of the red onion. Combine with lime juice, a pinch of sugar and a pinch of salt in a small bowl. Stir and set aside to quick-pickle.

    Finely chop the remaining red onion. Heat a drizzle of oil in a large pan over medium-high heat. Add the chopped onion, season, and cook for 4–5 minutes until softened. Add the garlic and cook for 30 seconds.

    Add the ground pork, season, and cook breaking up the meat until browned and cooked through, 4–6 minutes.

    Combine the BBQ sauce, pickling liquid from the onion, 3 tbsp ketchup, ½ tsp sugar and ¼ cup water. Add to the pork and cook, stirring, until the sauce is thickened, 2–3 minutes.

    Brush the cut sides of the buns with melted butter and toast them in the oven for 3–5 minutes, until golden. Fill with the BBQ pork, top with the pickled onion and a shake of hot sauce, and serve with the sweet potato wedges alongside.
