Beef and Broccoli Stir-Fry

Classic Chinese beef and broccoli in savory sauce

Ingredients

  • 1 lbsirloin steak, thinly sliced against the grain
  • 1 tspsoy sauce, for marinade
  • 1 tspdry sherry, for marinade
  • 1/2 tspcornstarch, for marinade
  • 1/8 tspblack pepper, for marinade
  • 2 tbspoyster sauce, for sauce
  • 1 tspdry sherry, for sauce
  • 1 tbspsoy sauce, for sauce
  • 1/4 cupchicken stock, for sauce
  • 1 lbbroccoli, cut into florets
  • 2 tbsphigh-heat cooking oil, such as avocado or peanut oil
  • 2 clovesgarlic, minced
  • 1 tspcornstarch, for slurry; dissolved in 1 tbsp water
  • 1 tbspwater, for cornstarch slurry

Method

    Combine the marinade ingredients (1 tsp soy sauce, 1 tsp sherry, ½ tsp cornstarch, ⅛ tsp pepper) in a bowl. Add the sliced beef, toss to coat, and let stand for 10 minutes.

    Stir together the sauce (oyster sauce, 1 tsp sherry, 1 tbsp soy sauce, chicken stock) in a small bowl and set aside.

    Bring a pot of water to a boil. Add the broccoli and blanch for 2 minutes until crisp-tender. Drain well.

    Heat a wok or large skillet over the highest heat possible until smoking. Add the oil and swirl to coat. Spread the beef in a single layer and fry undisturbed for 1 minute. Flip, add the garlic, and cook for another 30–60 seconds until no longer pink.

    Pour in the sauce and the cornstarch slurry (1 tsp cornstarch dissolved in 1 tbsp water). Stir until the sauce boils and thickens, about 30 seconds. Fold in the broccoli.

    Serve immediately over steamed rice.
