Beef Lo Mein

Stir-fried beef and noodles in oyster sauce

Ingredients

  • 225 gbeef, thinly sliced; approx ½ lb
  • salt, for marinade
  • white pepper, for marinade
  • 2 tspsesame oil, divided: 1 tsp marinade, 1 tsp sauce
  • 1/2egg, beaten; for marinade
  • 3 tbspcornstarch, for marinade
  • 5 tbspoil, divided: 1 tbsp marinade, 4 tbsp for cooking
  • 115 glo mein noodles, fresh or dried; approx ¼ lb
  • 1/2 cuponion, sliced
  • 1 tspgarlic, minced
  • 1 tspginger, minced
  • 1 cupbean sprouts
  • 1 cupmushrooms, sliced; shiitake or button
  • 1 tbspoyster sauce
  • 1 tspsugar
  • 1 tspsoy sauce
  • 1 cupwater, for cooking vegetables in wok

Method

    Marinate the beef: combine the sliced beef with a pinch each of salt and white pepper, 1 tsp sesame oil, ½ beaten egg, cornstarch, and 1 tbsp oil. Mix well and let stand for 10 minutes.

    Boil the noodles in a large pot of boiling water for 10 seconds (fresh) or according to package instructions. Drain and rinse under cold water.

    Heat 2 tbsp oil in a wok over high heat. Add the beef and cook until medium-done, about 2–3 minutes. Remove and set aside.

    Add another 2 tbsp oil to the wok. Add the onion, garlic, ginger, bean sprouts, mushrooms, and 1 cup water. Bring to a vigorous simmer. Add the noodles and toss to combine.

    Make the sauce by combining oyster sauce, a pinch of white pepper, 1 tsp sesame oil, sugar, and soy sauce. Pour over the noodles. Add the beef back to the wok and stir-fry until everything is coated and heated through.
