Breakfast Potatoes
Crispy breakfast potatoes with bacon, garlic and a maple syrup finish.
Ingredients
- 3potatoes, medium, cut into medium dice
- 1 tbspolive oil, plus more as needed
- 2 piecebacon, strips; freeze before chopping for easier handling
- garlic, minced
- 1 tbspmaple syrup
- parsley, fresh or dried; to garnish
- salt
- black pepper
- old bay seasoning, to taste
- eggs, to serve; sunny-side-up

Wash and cut the potatoes into medium-dice cubes. Place in a bowl of cold water to prevent browning.

Heat 1–2 tbsp oil in a large skillet over medium-high heat. Drain the potatoes and add to the pan. Season with salt, pepper and Old Bay seasoning.

Cook for 10 minutes, stirring often, until golden and brown. Add more oil if needed.

Chop the bacon and add to the potatoes. Cook for 5–6 minutes until the bacon crisps and the fat renders into the potatoes.

Reduce heat to medium-low. Add the minced garlic and toss. Season again. Add dried or fresh parsley. Cook until fragrant, about 1 minute.

Drizzle over the maple syrup and toss. Cook for 1 more minute to caramelise.

Serve in a warm bowl with a sunny-side-up egg alongside.
