Cool, garlicky Turkish yogurt and cucumber dip
Ingredients
- 500 gplain yogurt
- 2 tsplemon juice
- 1 tbspextra virgin olive oil, plus extra to garnish
- 1 tbspdried mint, plus extra to garnish
- 1cucumber
- 2 clovegarlic, minced
- 3/4 tspflaky salt
Method

Set a sieve over a large bowl and line it with a thick sheet of kitchen paper or clean muslin. Spoon in the yogurt, cover with another sheet of paper, and leave to strain in the fridge for a minimum of 12 hours.

Combine the lemon juice, most of the olive oil, and the dried mint in a bowl. Stir well and leave for the mint to soften and absorb the liquid. Mix in the strained yogurt.

Halve the cucumber lengthways and remove the seeds with a spoon. Halve widthways, then coarsely grate into the bowl the yogurt was straining over. Squeeze out as much liquid as possible using clean hands or a muslin cloth.

Add the drained grated cucumber, garlic, and ¾ tsp flaky salt to the yogurt mixture and stir well. Garnish with a drizzle of extra virgin olive oil and a sprinkling of dried mint.
