Cajun Spiced Fish Tacos

Cajun fish tacos with avocado, salsa and lemony sour cream.

Ingredients

  • 2 tbspcajun spice mix
  • 1 tspcayenne pepper
  • 4white fish, fillets (cod, haddock or similar)
  • 1 tspvegetable oil
  • 8flour tortillas
  • 1avocado, sliced
  • 2little gem lettuce, shredded
  • 4spring onions, shredded
  • 300 mlsalsa
  • sour cream, 1 pot (approx 150ml), for the dressing
  • 1lemon, juice only, for the dressing
  • 1 clovegarlic, finely chopped, for the dressing

Method

    Mix the cajun spice and cayenne pepper with a little salt and pepper on a large plate. Coat the fish fillets all over in the spice mix.

    Heat a little oil in a frying pan over medium heat. Add the fish and cook until golden. Reduce the heat and continue frying until cooked through, about 10 minutes total. Cook in batches if needed.

    Make the dressing by combining the sour cream, lemon juice and garlic with a little seasoning.

    Warm the tortillas in the microwave for 5–10 seconds. Pile with avocado, lettuce and spring onion, add a spoonful of salsa, top with large flakes of fish and drizzle over the dressing.
