Cambodian Stir-fried Morning Glory with Pork and Fermented Soybeans

Ingredients

  • morning glory, water spinach / kangkong, cut into pieces
  • 150 gminced pork
  • 2 tbspfermented soya beans
  • 4 clovegarlic, chopped
  • vegetable oil, for frying
  • fish sauce, a dash, to season
  • sugar, a pinch, to balance
  • chilli, a sprinkling, to taste

Method

    Heat 1 tbsp vegetable oil in a wok or large pan over medium heat. Add the garlic and stir-fry for about 30 seconds until fragrant but not burnt.

    Add the minced pork and break it up with a spatula. Stir-fry until fully cooked and browned, about 2–3 minutes.

    Stir in the fermented soya beans and cook for 1 minute, mixing thoroughly with the pork.

    Toss in the morning glory and stir-fry for 2–3 minutes, keeping the heat high to maintain the bright green colour and crisp texture.

    Check the seasoning and adjust with fish sauce or sugar as needed. Transfer to a serving dish and serve immediately with steamed rice.
