Caribbean Tamarind Balls

Sour-sweet Jamaican tamarind and sugar confection balls.

Ingredients

  • 450 gtamarind pulp, seedless pulp
  • 1 1/2 cupsugar, divided: most mashed into tamarind, remainder for coating

Method

    Add the tamarind pulp and 1 cup of the granulated sugar to a bowl and mash together with a spoon or fork until fully combined.

    Take small amounts of the mixture and roll between your palms into marble-sized balls (or slightly larger as preferred).

    Spread the remaining ½ cup sugar on a flat plate or sheet pan. Roll each tamarind ball in the sugar until well coated.

    Eat immediately or leave to set for a few hours or overnight for a firmer texture and more crystallised coating.
