Cheese Borek
Flaky phyllo triangles filled with melted cheese and herbs
Ingredients
- 1egg, beaten
- 1 bunchparsley, chopped
- 2 clovegarlic, minced
- 3/4 tspcrushed red pepper
- 6 ozgouda cheese, grated
- 6 ozemmentaler cheese, grated
- 12phyllo dough, sheets
- 1 1/2 cupunsalted butter, melted, for brushing

In a medium bowl, whisk together the egg, parsley, garlic, and crushed red pepper. Mix in the Gouda and Emmentaler.

Preheat the oven to 175°C/350°F. Lightly butter a large baking sheet.

Working one sheet at a time, place a sheet of phyllo on a flat surface and brush with about 1 tbsp melted butter. Cut lengthwise into 4 strips.

Place a rounded teaspoon of the cheese mixture at one end of each strip. Fold the corner over the filling to form a triangle, then continue folding in triangular folds to the end of the strip, encasing the filling. Repeat with the remaining phyllo and filling.

Arrange the triangles in a single layer on the prepared baking sheet. Bake for 30 minutes, or until lightly browned. Serve warm.
