Chicken Alfredo Primavera

Creamy chicken and vegetable pasta with white wine Parmesan sauce.

Ingredients

  • 2 tbspbutter, divided: 1 tbsp for chicken, 1 tbsp for vegetables
  • 3 tbspolive oil, divided: 2 tbsp for chicken, 1 tbsp for vegetables
  • 5chicken breasts, boneless, seasoned with salt and pepper
  • 1 tspsalt, seasoned salt for chicken
  • 1squash, cut into 1/2-inch cubes
  • 1 headbroccoli, chopped into florets
  • 8 ozmushrooms, sliced
  • 1red bell pepper
  • 1onion, chopped
  • 3 clovegarlic
  • 1/2 tspred pepper flakes
  • 1/2 cupwhite wine
  • 1/2 cupmilk
  • 1/2 cupheavy cream
  • 1 cupparmesan cheese, grated, plus extra for garnish
  • 16 ozbowtie pasta, farfalle
  • salt, for pasta water
  • black pepper, to taste
  • parsley, chopped, for garnish

Method

    Heat 1 tablespoon of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat. Season both sides of each chicken breast with seasoned salt and a pinch of pepper. Cook for 5–7 minutes per side until cooked through. Transfer to a cutting board to rest.

    Meanwhile, bring a large pot of salted water to a boil. Add the bowtie pasta and cook, stirring occasionally, until al dente, about 12 minutes. Reserve ½ cup of pasta water before draining.

    In the same skillet used for the chicken, heat the remaining 1 tablespoon butter and 1 tablespoon olive oil over medium heat. Add the squash, broccoli, mushrooms, red pepper, and onion, along with the red pepper flakes, and stir to coat. Cook, stirring often, until the vegetables are tender, about 5 minutes. Do not season yet.

    Add the garlic and a generous pinch of salt and pepper. Cook for 1 minute.

    Deglaze the pan with the white wine. Cook until reduced by half, about 3 minutes.

    Stir in the milk, heavy cream, and reserved pasta water. Bring to a gentle boil, then simmer for 2–3 minutes to reduce slightly.

    Turn off the heat. Add the Parmesan cheese and cooked pasta, and toss to combine. Slice the rested chicken and add it to the pan. Season with salt and pepper to taste.

    Garnish with extra Parmesan and chopped parsley, if desired. Serve immediately.
