Coddled Pork with Cider

One-pot Irish pork chops braised in cider with root vegetables.

Ingredients

  • butter, a knob
  • 2pork chops
  • 4bacon, rashers, roughly chopped
  • 2potatoes, medium, diced
  • 1carrots, sliced
  • 1/2swede, diced
  • 1/2cabbage, shredded
  • 1 leafbay leaf
  • 100 mldry cider
  • 100 mlchicken stock

Method

    Heat a knob of butter in a casserole dish until sizzling. Fry the pork chops for 2–3 minutes on each side until browned. Remove from the pan.

    Add the bacon, carrot, potatoes and swede to the pan and gently fry until slightly coloured. Stir in the cabbage, then return the chops on top.

    Add the bay leaf, pour over the cider and stock. Cover the pan and leave to gently simmer for 20 minutes until the pork is cooked through and the vegetables are tender.

    Serve straight from the dish.
