Crispy tofu peanut noodles
Golden tofu and rice noodles tossed in a creamy peanut-lime sauce.

Ingredients
- 14 ozExtra-firm tofu, pressed and cubed
- 8 ozRice noodles
- 1/3 cupPeanut butter, natural
- 3 tbspTamari
- 1Lime, juiced
- 1 tbspMaple syrup
- 1 tbspSriracha
- 2 clovesGarlic, minced
- 1Red bell pepper, thinly sliced
- 2 tbspCornstarch
- 2 tbspToasted sesame oil
- 3Green onions, sliced
- 1/4 cupRoasted peanuts, crushed

Toss the pressed tofu with the cornstarch and a pinch of salt. Heat the sesame oil in a skillet over medium-high and fry, turning, until golden and crisp on all sides, about 8 minutes.

Meanwhile, cook the rice noodles per the package, then drain and rinse under cool water so they don't clump.

Whisk the peanut butter, tamari, lime juice, maple syrup, sriracha, and garlic with a splash of warm water until pourable.

Add the pepper to the tofu pan and stir-fry 2 minutes. Add the noodles and sauce and toss to coat over low heat.

Top with green onions and crushed peanuts.
