Ingredients

  • 14 ozExtra-firm tofu, pressed and cubed
  • 8 ozRice noodles
  • 1/3 cupPeanut butter, natural
  • 3 tbspTamari
  • 1Lime, juiced
  • 1 tbspMaple syrup
  • 1 tbspSriracha
  • 2 clovesGarlic, minced
  • 1Red bell pepper, thinly sliced
  • 2 tbspCornstarch
  • 2 tbspToasted sesame oil
  • 3Green onions, sliced
  • 1/4 cupRoasted peanuts, crushed

Method

  1. 1

Toss the pressed tofu with the cornstarch and a pinch of salt. Heat the sesame oil in a skillet over medium-high and fry, turning, until golden and crisp on all sides, about 8 minutes.

  2. 2

Meanwhile, cook the rice noodles per the package, then drain and rinse under cool water so they don't clump.

  3. 3

Whisk the peanut butter, tamari, lime juice, maple syrup, sriracha, and garlic with a splash of warm water until pourable.

  4. 4

Add the pepper to the tofu pan and stir-fry 2 minutes. Add the noodles and sauce and toss to coat over low heat.

  5. 5

Top with green onions and crushed peanuts.
