Dutch Doughnuts (Oliebollen)

Dutch yeasted dough balls fried until golden and puffy.

Ingredients

  • 500 gflour
  • 500 mlmilk, lukewarm
  • 10 ginstant yeast
  • 10 gsalt
  • 25 gsugar
  • oil, for deep frying at 180°C

Method

    Warm the milk to lukewarm if cold. Combine the flour, instant yeast and sugar in a large bowl. Gradually mix in the warm milk until you have a smooth batter. Add the salt and stir with a wooden spoon until smooth and pourable.

    Cover with a clean tea towel and leave in a warm place for about 1 hour to rise.

    Heat a deep fryer or large pot of oil to 180°C (350°F).

    Stir the batter, then dip two spoons or an ice cream scoop into the hot oil first, then into the batter. Carefully drop the batter into the oil in batches, without overcrowding. Fry until golden brown on both sides — they will often turn themselves automatically.

    Remove the doughnuts and drain on kitchen paper. Serve dusted generously with powdered sugar.
