Fašírky (Slovak Meat Patties)
Golden crispy Slovak pork patties with marjoram and mustard.
Ingredients
- 500 gground pork
- 1onion, medium, finely chopped
- 2 clovegarlic, minced
- 2bread, slices, soaked in milk until soft then squeezed dry
- 30 mlmilk, for soaking the bread
- 1egg, for the meat mixture
- 1 tspsalt
- 1/2 tspblack pepper
- 1 tspdried marjoram
- 1 tspmustard
- 1 tbspparsley, chopped
- 1/2 cupplain flour, for coating
- 1egg, beaten, for coating
- 1 cupbreadcrumbs, for coating
- vegetable oil, for shallow frying

Soak the bread slices in milk or water until soft. Squeeze out the excess liquid and mash into crumbs.

In a large bowl, combine the ground pork, chopped onion, garlic, soaked bread, egg and all the seasonings (salt, pepper, marjoram, mustard, parsley). Mix until evenly combined.

Take portions of the mixture and shape into palm-sized patties, flattening them slightly for even cooking.

Set up three bowls: flour, beaten egg and breadcrumbs. Dust each patty in flour, dip in egg, then coat in breadcrumbs.

Heat vegetable oil in a pan over medium heat. Fry the patties for 4–5 minutes per side until golden brown and fully cooked through.

Transfer to a paper-towel-lined plate to drain. Serve hot with mashed potatoes, cabbage salad or fresh bread, and mustard, pickles or garlic sauce on the side.
