Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

  • 16 ozgreen beans, frozen
  • 1/4 cupolive oil
  • salt, to taste
  • 1 clovegarlic, minced
  • 1/4 cupcoriander, fresh, chopped

Method

    Place the frozen green beans in a large pot and drizzle with the olive oil. Season with salt, put on the lid, and cook over medium-high heat, stirring occasionally. The beans will steam in the moisture released as the ice crystals melt. Cook until the beans are to your desired doneness — Syrians cook them until they turn a brownish-olive colour.

    Add the garlic and coriander and cook for a further minute or two until the coriander just begins to wilt. Serve with warm pitta bread.
