Traditional Newfoundland steamed raisin and molasses pudding.

Ingredients

  • 2 cupall-purpose flour
  • 1/2 cupbrown sugar
  • 2 tspbaking powder
  • 1 tspginger, ground
  • 1 tspallspice, ground
  • 1 tspcinnamon, ground
  • 1 cupraisins
  • 1/3 cupbutter, melted
  • 1/2 cupmolasses
  • 1 tbspwater, for dough; may need more depending on dough consistency

Method

    In a bowl, whisk together the flour, brown sugar, baking powder, ginger, allspice and cinnamon.

    Add the raisins and stir well, coating them in the flour mixture.

    Add the melted butter, molasses and water. Mix with a wooden spoon until a ball forms. Shape by hand if needed.

    Place the dough in a cotton pudding bag. Tie securely, leaving at least 1 inch of room for expansion.

    Boil the pudding for 1½ hours.

    Remove from the water when firm. Cool slightly, then remove from the bag. Slice like a cake and serve warm with rum butter sauce, warm molasses, or Molasses Coady (1 cup molasses + ¼ cup butter + ¼ cup water, simmered together).
