Fruit and Cream Cheese Breakfast Pastries

Ingredients

  • 1 1/4 ozcream cheese
  • 1 1/4 cupsugar
  • 1 tspvanilla extract
  • plain flour
  • 2 piecepuff pastry
  • strawberries
  • raspberries
  • blackberries

Method

    Preheat oven to 200°C (400°F). Line two baking sheets with parchment paper.

    In a bowl, mix the cream cheese, sugar and vanilla extract until fully combined.

    Lightly flour a surface and roll out each puff pastry sheet slightly. Cut each sheet into 9 equal squares (18 total).

    On each square, cut an L shape from the top-right corner and an L shape from the bottom-left corner, approximately 1 cm (½ inch) from the edge. The L cuts should reach all the way along both sides but must not meet at the ends. The pastry should look like a picture frame with two corners still intact.

    Fold the top-right corner down towards the inner bottom corner to create a diamond shape with raised edges.

    Place 1–2 tsp of cream cheese filling in the centre. Top with berries. Place on prepared baking sheets.

    Bake for 15–20 minutes until golden brown and puffed.
