Garides Saganaki
Greek prawns in tomato and white wine sauce topped with melted feta.
Ingredients
- 500 graw king prawns, legs and shells removed after brief boiling; heads and tails left on
- 3 tbspolive oil
- 1onion, finely chopped
- parsley, freshly chopped; a small handful is more likely
- 250 mlwhite wine
- 400 gchopped tomatoes, one 400g can
- 1/2 tspgarlic, minced
- 200 gfeta cheese, cubed

Place the prawns in a pot, cover with water and boil for 5 minutes. Drain, reserving the liquid, and set the prawns aside to cool.

Heat 2 tbsp oil in a saucepan. Add the onion and cook, stirring, until soft. Mix in the parsley, wine, tomatoes, garlic and remaining oil. Simmer, stirring occasionally, for about 30 minutes until the sauce has thickened. While it simmers, peel the cooled prawns: pinch off the legs, then pull away the shells, leaving the heads and tails on.

Stir in the peeled prawns and bring back to a simmer. Cook for about 5 minutes until the prawns are heated through.

Add the feta and remove from the heat. Let stand until the cheese starts to melt. Serve warm with crusty bread.
