Garlic butter steak bites & zucchini
Seared sirloin and zucchini in a glossy garlic-butter pan sauce.
Ingredients
- 1 1/2 lbSirloin steak, cut into 1-inch cubes
- 2Zucchini, cut into half-moons
- 3 tbspButter
- 4 clovesGarlic, minced
- 1 tspFresh thyme, leaves
- 1 tbspOlive oil
- 1/4 tspRed pepper flakes
- Salt and pepper
- 2 tbspFresh parsley, chopped

Pat the steak cubes very dry and season generously with salt and pepper. Dry meat is what gives you a hard sear instead of a steam.

Heat the olive oil in a large skillet over high until shimmering. Add the steak in a single layer and sear undisturbed for 2 minutes, then toss and sear 1 minute more for medium. Remove to a plate.

Lower to medium-high. Add the zucchini with a pinch of salt and cook until just tender and lightly browned, about 4 minutes.

Push the zucchini aside and add the butter, garlic, thyme, and red pepper flakes. Cook until fragrant, about 45 seconds — don't let the garlic brown.

Return the steak and any juices, toss everything in the garlic butter for 30 seconds, and finish with parsley.
