Griddled Flatbreads
Puffy griddled flatbreads perfect for dips and mezze
Ingredients
- 250 gstrong wholemeal flour
- 250 gstrong white bread flour
- 15 gyeast, instant or fast-action
- 1 tspsugar
- 1 tspsalt
- 350 mlwater, warm
- 2 tbspolive oil
Method

Tip the flours into a food processor. Add the yeast, sugar, and 1 tsp salt, then mix. Pour in 350ml warm water and the oil and process to a soft dough. Mix for 1 minute, then leave until doubled in size, about 1 hour.

Pulse the dough a couple of times to knock out the air, then tip onto a floured surface. Cut in half and roll one half out to a rectangle about 20 x 40cm. Trim the edges and cut into 8 squares of about 10cm. Arrange on parchment-lined trays. Repeat with the second half. Leave to rise for 30 minutes until just starting to puff.

Place the flatbreads directly on a hot BBQ grill or griddle pan and cook for a couple of minutes until they puff up. Flip and cook the other side. Tip into a basket and serve with dips.
