Jamaican Pepper Shrimp

Fiery Jamaican pepper shrimp simmered in spiced annatto broth.

Ingredients

  • 1 lbprawns, whole or peeled
  • 2scotch bonnet, minced; very hot — adjust to taste
  • 1 tbspall-purpose seasoning
  • 2 tspground annatto, ground achiote; gives the characteristic orange colour
  • 2 tspground allspice
  • 3/4 cupshrimp stock
  • 1/4 cuponion, diced
  • 2 clovegarlic, minced
  • 2 tbspwhite vinegar
  • 3 sprigthyme
  • salt, to taste

Method

    In a bowl, combine the prawns with the minced Scotch bonnet, all-purpose seasoning, ground annatto and ground allspice. Toss to coat evenly and leave to marinate for 10 minutes.

    Heat a large pan over medium heat. Add the shrimp stock and bring to a gentle simmer. Stir in the diced onion and garlic and cook for about 2 minutes until softened.

    Add the seasoned prawns and thyme sprigs. Cover and cook for 5–7 minutes, stirring occasionally, until the prawns are bright orange and cooked through.

    Add the white vinegar, stir and cook for 1 more minute. Season to taste. Transfer to a plate with a slotted spoon and drizzle with some of the cooking liquid.
