Kadu Borani
Sweet Afghan pumpkin and onion over cooling yogurt.
Ingredients
- 1squash (pumpkin), medium; peeled and cut into 1 cm pieces
- 5onions, chopped
- 1garlic, whole bulb
- oil, for deep frying
- 1 tspturmeric
- 7 tbspsugar
- 1/2 tspsalt
- 2 cupwater, divided
- 4 tbspyogurt, full-fat, for serving
- green chilli, to taste, to garnish

Add the sugar and remaining 1 cup of water. Reduce heat and cook until the water has reduced.

Peel the squash and cut into 1 cm wide pieces. Deep fry in oil until golden, then set aside.

In the same oil, deep fry the onions until golden. Remove and grind with the garlic (if using garlic paste, mix it in once the onions are ground).

Add a small amount of oil to a pan over medium heat. Add the turmeric. Mix the salt into 1 cup of water and pour into the pan. Layer the fried squash, then the onion and garlic mixture. Repeat layers until all the squash, onion, and garlic are used.

Spread 1–2 tablespoons of yogurt on a serving plate. Place the squash on top with another layer of yogurt. Garnish with sliced green chilli and serve.
