Kenyan Beef Curry

Slow-simmered East African beef curry

Ingredients

  • 900 gsirloin steak tips (stewing beef), cut into bite-sized pieces
  • 960 mlwater (for initial boil), approx 4 cups
  • 4garlic cloves, minced
  • 2 tspground ginger
  • 2 tbspcooking oil
  • 2 mediumred onions, sliced
  • 4tomatoes, chopped
  • 2 tbsppaprika
  • black pepper, approx 1/2 tsp
  • 2 tspcurry powder
  • 4 tbsptomato purée
  • salt, to taste
  • 1red chilli, sliced, for garnish
  • fresh cilantro (coriander), leaves only, for garnish

Method

    Bring 4 cups of water to a boil in a large pot. Add the beef, garlic and ginger, stir well, and return to a gentle simmer. Cover and cook for 20 minutes, skimming any foam from the surface. Drain the beef, reserving the cooking liquid.

    Return the pot to medium heat with the oil. Fry the onions for 5–7 minutes until softened.

    Add the tomatoes and cook, stirring occasionally, for 3–5 minutes until they break down.

    Add the drained beef and stir well. Cook over medium heat for 5 minutes.

    Stir in the paprika, black pepper, curry powder, tomato purée and salt to taste.

    Pour in the reserved cooking water plus enough extra water to just cover the meat. Bring to a boil, then reduce heat and simmer uncovered for about 1 hour until the meat is very tender and the sauce has thickened. Add water as needed to maintain a curry consistency.

    Taste and adjust seasoning. Garnish with sliced red chilli and fresh cilantro leaves before serving.
