Kofta Burgers

Spiced lamb kofta burgers piled into warm pitta bread.

Ingredients

  • 1000 glamb mince
  • 2onion, grated or very finely chopped
  • 1 headgarlic, whole head; all cloves crushed or grated
  • 6 tbspgaram masala, unusually large quantity
  • 1 bunchcoriander, fresh; finely chopped
  • 1 tbspchilli sauce
  • 8pitta bread, to serve
  • 4tomatoes, sliced; for serving
  • 1/2red cabbage, shredded; for serving
  • 1red onion, sliced; for serving
  • yogurt, small pot; for serving

Method

    Heat the grill to its highest setting. Lay the burgers in a single layer on a baking tray and grill on the highest shelf for 5 to 6 minutes on each side until browned and cooked through.

    Tip the lamb mince into a large bowl with the onion, garlic, garam masala, coriander, chilli sauce and a good pinch of salt. Mix well with your hands until completely combined.

    Shape the mixture into 16 small flat burgers. These can be chilled for up to 1 day or frozen for up to 1 month.

    Pile the burgers on a platter and serve with warm pitta, sliced tomatoes, red cabbage, red onion and yogurt.
