Kurabie Butter Cookies

Soft Middle Eastern butter cookies with yogurt and egg glaze.

Ingredients

  • 650 gflour, plus extra if dough is too sticky
  • 275 mlgreek yogurt
  • 3eggs, for dough
  • 200 gsugar
  • 120 gbutter, melted; for dough
  • 1 tspbaking powder
  • 1 dropvanilla extract, very small amount
  • 1egg, beaten; for egg wash
  • 10 gbutter, extra melted butter; rubbed on hands before rolling each ball

Method

    In a large bowl, combine all the dough ingredients (flour, yogurt, 3 eggs, sugar, 120g melted butter, baking powder, vanilla). Mix until a dough forms. It should be slightly sticky — add extra flour if needed.

    Rub some of the extra melted butter over your hands. Divide the dough into 20 equal pieces and roll each into a smooth ball, rubbing a little butter on your hands between each one.

    Place the balls on a greased or lined baking tray, spaced 5cm apart. Bake in two batches if needed.

    Brush each ball with the beaten egg. Bake at 180°C for 20 minutes until light golden and slightly soft in the centre. Cool on a rack.
