Lamb Tzatziki Burgers

Spiced lamb bulgur burgers with cool mint tzatziki.

Ingredients

  • 25 gbulgur wheat, boiled for 10 minutes, drained and pressed dry
  • 500 glamb mince
  • 1 tspground cumin
  • 1 tspground coriander
  • 1 tsppaprika
  • 1 clovegarlic, finely chopped; optional
  • olive oil, for brushing and frying
  • 4burger buns, toasted if desired
  • cucumber, grated and squeezed dry; for tzatziki
  • 200 ggreek yogurt, for tzatziki
  • 2 tbspmint, fresh, chopped; for tzatziki

Method

    Tip the bulgur into a pan, cover with water and boil for 10 minutes. Drain thoroughly in a sieve, pressing out any excess water.

    Squeeze the grated cucumber dry and mix into the yogurt with the chopped mint and a little salt to make the tzatziki.

    In a large bowl, combine the drained bulgur, lamb mince, cumin, coriander, paprika, garlic and seasoning. Mix well and shape into 4 burgers.

    Brush the burgers with oil and fry or barbecue for about 5 minutes on each side until browned and cooked all the way through.

    Serve in buns with the tzatziki, sliced tomatoes, onion and fresh mint leaves.
