Matar Paneer

Fried paneer and peas in a fragrant Indian tomato sauce.

Ingredients

  • 1 tbspsunflower oil
  • 225 gpaneer, cut into cubes
  • ginger, likely 2 cm piece, grated
  • 1 tspground cumin
  • 1 tspturmeric
  • 1 tspground coriander
  • 1green chilli
  • 4tomatoes, large
  • 150 gpeas, fresh or frozen
  • 1 tspgaram masala
  • fresh coriander, small, leaves only, to garnish
  • naan bread, to serve

Method

    Heat the oil in a frying pan over high heat until shimmering. Add the paneer, reduce heat slightly, and fry until browned at the edges, turning to brown all sides. Remove and drain on kitchen paper.

    Add the ginger, ground cumin, turmeric, ground coriander, and green chilli to the pan and fry for 1 minute.

    Add the tomatoes and mash with the back of a spoon. Simmer for 5 minutes until the sauce smells fragrant. Add a splash of water if too thick. Season well.

    Add the peas and simmer for 2 minutes, then stir in the fried paneer and sprinkle over the garam masala. Top with coriander leaves and serve with naan, roti, or rice.
