Norwegian Krumkake

Norwegian spiced waffle cones made in a krumkake iron.

Ingredients

  • 3egg, large
  • 3/4 cupsugar
  • 2/3 cupbutter, melted and cooled slightly
  • 1 tspcardamom, ground
  • nutmeg, a pinch
  • 1/2 tspsalt
  • 1 1/4 cupflour
  • water, a splash; optional — added if batter is too thick

Method

    Whisk the eggs and sugar together until the mixture thickens.

    Once completely cooled, store in a metal or glass tin lined with paper towels. Can also be frozen.

    Melt the butter and leave to cool slightly, then stir into the egg mixture.

    Stir in the cardamom, nutmeg and salt, then slowly add the flour, stirring to avoid lumps.

    Rest the batter for at least 30 minutes. If it seems too thick, stir in a small splash of water.

    Heat a krumkake iron and spoon about 1 heaping tablespoon of batter onto the iron. Bake until golden.

    Immediately while hot, roll around a krumkake cone roller or shape over a cup. The krumkake harden very quickly, so work fast. Let set on the roller until the next one is ready.
