Polskie Naleśniki (Polish Pancakes)

Thin Polish crepe pancakes with a light egg batter.

Ingredients

  • 1 cupflour
  • 2eggs
  • 1 cupmilk
  • 3/4 cupwater
  • salt, a pinch
  • 1 tspsugar
  • 3 tbspbutter, melted; mixed into batter or used to grease the pan

Method

    Combine the flour, eggs, milk, water, salt and sugar in a large bowl. Mix with a hand mixer until you have a smooth, lump-free batter.

    Stir in the melted butter. Alternatively, use the butter to grease the pan before each pancake.

    Heat a non-stick pan over medium heat. Pour in a ladleful of batter and swirl the pan to spread thinly.

    Cook until the pancake pulls away from the sides and the surface is no longer wet, then flip and cook briefly on the other side. Transfer to a plate.

    Repeat with the remaining batter. Serve warm with the filling of your choice.
