Quick Salt & Pepper Squid

Chargrilled squid with five-spice, sesame oil and sweet chilli dip.

Ingredients

  • 400 gsquid, cleaned; body opened out and scored in a criss-cross
  • 3 tbspneutral oil, for brushing
  • 1/2 tspchinese five-spice powder
  • 2 tspsea salt
  • 1 tspblack pepper, freshly ground
  • sesame oil, a dash, to finish
  • fresh coriander, a few sprigs, to garnish
  • sweet chilli sauce, a drizzle, to serve

Method

    Clean the squid (or ask your fishmonger to do it). Cut open the body and open out flat. Wash well and pat dry. Score the top in a criss-cross pattern with the tip of a sharp knife.

    Brush the squid with oil. Heat a barbecue or griddle pan until very hot.

    Mix together 2 tsp sea salt, the Chinese five-spice and 1 tsp freshly ground black pepper. Sprinkle over both sides of the squid just before cooking.

    Cook the squid for about 1 minute on each side until it starts to curl and char at the edges.

    Transfer to a serving plate and drizzle with sesame oil. Garnish with coriander leaves and serve with sweet chilli sauce.
