Rogaliki (Polish Croissant Cookies)

Polish flaky cream cheese crescent cookies filled with jam.

Ingredients

  • 1 cupbutter, softened; likely kneaded into the dough with the other ingredients
  • 3egg yolks
  • 225 gcream cheese
  • 1 tspbaking powder
  • 3 cupflour, added gradually to form dough
  • jam, 1 jar (~400g); your favourite flavour; for filling
  • powdered sugar, for dusting to serve

Method

    In a bowl, mix the egg yolks, cream cheese, baking powder and softened butter with a hand mixer until combined. Gradually add the flour, kneading by hand when the mixer can no longer manage, until a smooth dough forms.

    Roll into a log, wrap in foil and freeze for 15 minutes. Meanwhile preheat oven to 190°C (375°F).

    Divide the dough in half. Roll each piece out on a lightly floured surface to about 3 mm thick, then cut into 7.5 cm (3-inch) triangles.

    Place a small spoonful of jam in the centre of each triangle. Roll up from the wide end to form a croissant shape.

    Place on a greased baking sheet. Bake for 10–12 minutes until golden. Repeat with remaining dough.

    Cool slightly, then dust generously with powdered sugar.
