Śledź w Oleju (Polish Herrings in Oil)

Polish salt herrings marinated in oil with allspice and bay leaf.

Ingredients

  • 8herring, salt herrings, soaked in cold water for at least 1 hour (change water if very salty)
  • 1/2 cupolive oil, enough to cover the herrings in the jar
  • 1 tspallspice, whole berries
  • 1 tspblack peppercorns
  • 1 leafbay leaf
  • 1onion, sliced, to serve
  • lemon, to serve
  • dill or parsley, to serve

Method

    Soak the herrings in cold water for at least 1 hour. If very salty, repeat with fresh water. Drain thoroughly and slice into bite-sized pieces.

    Place in a jar large enough to hold all the pieces. Cover with the olive oil, allspice, peppercorns and bay leaf. Seal the jar.

    Refrigerate for 2–3 days before eating. Keeps refrigerated for up to 2 weeks.

    Serve with finely chopped or sliced onion, lemon wedges and fresh dill or parsley.
