Soy-Glazed Meatloaves with Wasabi Mash and Roasted Carrots
Individual meatloaves with wasabi mash and soy glaze
Ingredients
- 450 gground beef, for the meatloaves
- 5potatoes, diced into 1cm pieces
- 340 gcarrots, cut on the diagonal into 1cm pieces
- 1scallion, whites finely chopped for the meatloaves; greens sliced for garnish
- 2 clovesgarlic, finely chopped; half for the meatloaves, half for the mash
- 1 slicebread (white, for binder), soaked in 2 tbsp water until pasty; binds the meatloaves
- sriracha, a squeeze, or to taste; for the meatloaf mixture
- 2 tbspsoy sauce, for the glaze
- 1 tspgarlic powder, for the glaze
- tomato ketchup, for the glaze
- 2 tspsugar, for the glaze
- 2 tbspbutter, for the mash
- wasabi paste, for the mash; add more to taste
- 1 tspvegetable oil, for tossing the carrots

Heat the oven to 220°C / 425°F. Wash and dry the produce. Dice the potatoes into 1cm pieces. Trim, peel and cut the carrots on the diagonal into 1cm-thick pieces. Trim and thinly slice the scallion, keeping the white and green parts separate, and finely chop the whites. Peel and finely chop the garlic. Toss the carrots with the oil, salt and pepper on one side of a baking sheet.

In a bowl, soak the bread in 2 tbsp water and break it up with your hands until pasty. Stir in the ground beef, a squeeze of sriracha, the scallion whites, half the garlic, salt and pepper. Mix just until combined — overworking makes the loaves dense — then shape into two loaves about 2.5cm tall. Set them on the empty side of the baking sheet.

Bake for 20 minutes. Meanwhile, put the potatoes in a pot with enough salted water to cover them by 5cm, bring to the boil and cook for 12–15 minutes until very tender. Scoop out 120ml of the cooking water and set it aside, then drain the potatoes.

Mix the soy sauce, garlic powder, ketchup and sugar in a bowl to make the glaze.

After 20 minutes, remove the tray from the oven and spoon half the glaze over the meatloaves. Return to the oven for 4–5 more minutes until the carrots are tender and the glaze is tacky.

Melt the butter in the empty potato pot over medium heat. Add the remaining garlic and cook for 30 seconds, until fragrant. Add the potatoes and the wasabi and mash, adding splashes of the reserved cooking water until smooth. Season well with salt and pepper.

Plate the meatloaves with the mash and carrots. Scatter over the scallion greens and serve the remaining glaze on the side.
