Spiced Smoky Barbecued Chicken

Herb-smoked barbecued chicken thighs with spiced marinade.

Ingredients

  • 2 clovegarlic
  • 1lemon, juice and zest
  • 2 tbspcurry powder
  • chilli flakes
  • 3 tbspolive oil
  • 12chicken thighs, bone-in, skin-on
  • 1 bunchrosemary, for smoking on barbecue grid
  • 1 bunchrosemary, second bunch for smoking
  • 1 bunchthyme, for smoking on barbecue grid
  • 1 bunchthyme, second bunch for smoking
  • 2 leafbay leaves, for smoking on barbecue grid

Method

    When the barbecue is hot, lay the bunches of rosemary, thyme and bay leaves on the grid. Place the chicken, skin side up, on top of the herbs. Close the lid if your barbecue has one. Cook on the smouldering herbs for about 10 minutes until the meat starts to colour.

    Smash the garlic with a little salt using a pestle and mortar. Add the lemon zest and juice, curry powder, chilli flakes, olive oil and a good grinding of black pepper. Mix to a paste.

    Toss the chicken in the marinade and set aside while you light the barbecue.

    Turn the chicken and continue to cook for a further 20–30 minutes, turning as necessary, until slightly charred and cooked through to the bone.
