Spotted Dick
The great British steamed suet pudding with currants.

Ingredients
- 250 gself-rising flour
- salt
- 125 gsuet, shredded beef or vegetarian suet
- 175 gcurrants
- 80 gcaster sugar, superfine sugar
- 1lemon, zest only
- 1orange, zest only
- 150 mlmilk, plus a little extra if needed
- custard, to serve
Method

Put the flour and salt in a bowl. Add the suet, currants, sugar, lemon zest and orange zest and stir to combine.

Pour in 150ml milk and mix to a firm but moist dough, adding a little extra milk if necessary.

Shape the dough into a fat roll about 20cm long. Place on a large rectangle of baking parchment, wrap loosely to allow for rising, and tie the ends with string like a Christmas cracker.

Place a steamer over a large pan of boiling water. Add the pudding to the steamer, cover and steam for 1.5 hours. Top up the pan with boiling water from time to time.

Remove from the steamer and allow to cool slightly before unwrapping. Serve sliced with warm custard.
