Thai Fried Rice with Prawns & Peas
Thai fried brown rice with king prawns, peas and a fried egg.

Ingredients
- 2 tbspvegetable oil
- 1red onion, sliced
- 2 clovegarlic, sliced
- 1red chilli, sliced
- 250 graw king prawns, peeled
- 140 gbrown rice, pre-cooked and cooled (approx 300g cooked); cook ahead
- 75 gfrozen peas
- 1 tbspsoy sauce
- 1 tbspfish sauce
- coriander, chopped, divided between cooking and garnish
- 4eggs, large, to fry for topping
- hot sauce, to serve

Heat 1 tbsp oil in a wok. Add the onion, garlic and chilli and cook for 2–3 minutes until golden. Add the prawns and cook for 1 minute.

Add the cooked rice and peas and toss until everything is very hot. Add the soy sauce and fish sauce, then stir through the chopped coriander.

Keep the rice warm while you heat the remaining oil in a frying pan. Fry the eggs with seasoning.

Divide the fried rice between 4 bowls and top each with a fried egg. Scatter with extra coriander and serve with hot sauce if liked.
