Turkish-Style Lamb
Yogurt-basted grilled lamb stuffed into toasted pitta.

Ingredients
- 4lamb leg steaks
- 2 tspturkish spice seasoning, a Turkish spice blend such as baharat or mixed dried spices
- 1 tspdried oregano
- 1 bunchfresh mint, leaves picked; half mixed into basting yogurt, half into serving yogurt
- 300 ggreek yogurt, split into two equal portions — one for basting, one for serving
- 4pitta bread, toasted
- 1/2iceberg lettuce, shredded
- 1red onion, thinly sliced
- 1lemon, for squeezing over to serve

Heat the grill to high. Season the lamb steaks and grill for 2 minutes on each side until browned but still very rare.

Mix the seasoning, oregano and half the mint into one portion of yogurt. Smother this over the lamb and return to the grill for another 2 to 3 minutes until the yogurt is blistered and the meat is cooked to your liking.

Leave the meat to rest on a board for a few minutes. Meanwhile, toast the pitta, shred the lettuce and thinly slice the red onion.

Stir the remaining mint into the second portion of yogurt. Thickly slice the lamb and stuff into the pitta with the lettuce, red onion and minted yogurt. Squeeze over lemon juice to serve.
