Ingredients

  • 140 gplain flour
  • 4eggs
  • 200 mlmilk
  • sunflower oil, drizzle to grease tins
  • salt
  • black pepper

Method

  1. 1

Heat oven to 230C/fan 210C/gas 8. Drizzle a little sunflower oil evenly into two 4-hole Yorkshire pudding tins or two 12-hole non-stick muffin tins. Place in the oven to heat through.

  2. 2

Tip the flour into a bowl and beat in the eggs until smooth.

  3. 3

Gradually add the milk, beating continuously until the batter is completely lump-free. Season with salt and pepper.

  4. 4

Pour the batter into a jug. Remove the hot tins from the oven and carefully pour the batter evenly into the holes.

  5. 5

Place the tins back in the oven and leave undisturbed for 20–25 minutes until the puddings have puffed up and browned.

  6. 6

Serve immediately, or cool completely and freeze for up to 1 month.
